Cambodian Bai Sach Chrouk- (Pork And Rice)

Bai Sach Chrouk is a Cambodian pork and rice dish. One of the best and famous street food in Cambodia. It is my favorite Cambodian breakfast. This recipe brings me back to my hometown. Itβs such a comfort food for me.
Bai Sack Chrouck (Pork and Rice) is usually drizzled with chopped green onion oil and comes with pickled veggies(cucumber, carrot, and radish), fried egg, or omelet slices, and dipping sauce.

INGREDIENTS
For Marinate Pork
4 boneless thin-cut pork chops
1 tbsp minced garlic
3 tbsp palm sugar or regular sugar
1 tbsp fish sauce
1 tsp salt
ΒΌ tsp ground black pepper
For Pickled Vegetables
1 small cucumber, julienned or sliced
1 small carrot, julienned or sliced
Radish (optional)
3 cloves garlic, chopped
2 tsp salt
4 tbsp rice vinegar or regular white vinegar
3 tbsp sugar
1 tsp fish sauce
For Dipping Sauce
4 tbsp fish sauce
3 tbsp palm sugar or regular sugar
2 tbsp white vinegar
1 cloves garlic, chopped
Thai chili peppers, sliced
For Green Onion Oil
4 tbsp cooking oil
2 green onions, chopped
For Egg Omelet
1 tbsp cooking oil
2 eggs, beaten
A pinch of salt
INSTRUCTIONS
In a medium mixing bowl, marinate the pork. Combine ingredients and mix everything well. Set it aside and let it marinated for 15 to 30 minutes. For the best result, refrigerate the pork chops overnight.
Meanwhile, make the pickled vegetables. In a bowl or a jar, combine the cucumber and carrot and all the ingredients. Use your hand or a spoon to mix the pickled vegetables. Let it sit in the refrigerator.
Next, the dipping sauce. Combine the sauce ingredients in a little bowl and set it aside.
In a high-heat pan, add cooking oil and chopped onions. Let it cook for about 30 seconds and pour the oil and green onions into a small bowl. Set aside.
In a medium-high heat pan, add cooking oil and two beaten eggs. Spread the beaten eggs all over the pan to make an omelet. Cook for about 30 to 40 seconds, then take it out and let it cool down. Cut the omelet into thin slices.
In a large hot pan, add 2 tbsp of cooking oil and add the marinated pork chops. Grill the pork chops on each side for about 5 to 6 minutes to cook.
Take the pork chops out and let it cool down. Cut the pork chops into thin slices.
Finally, you can serve with white rice. Add the pork chops on top of the rice. Then some vegetables, omelet slices, and dipping sauce on the side.
