Water Spinach or Morning Glory Stir-Fry

INGREDIENTS
150g morning glory aka water spinach, rinsed and cut into 2-3 inch pieces
2 tbsp cooking oil
5-6 cloves garlic
2-3 Thai chili peppers
2 tbsp dried shrimp
1 tsp oyster sauce
1/4 tsp mushroom soy sauce or regular light sauce
1/4 tsp sugar
For Serving
Steamed jasmine rice
INSTRUCTIONS
Soak the dried shrimp in the warm water for 10 minutes and pour out the water.
In a mortar and pestle, pound garlic and Thai chili peppers into a rough paste. Set it aside.
Then bring a wok to a high heat and add cooking oil.
Quickly add morning glory and chili garlic paste. Toss and stir for 30 seconds, then add dried shrimp, oyster sauce, mushroom soy sauce and sugar. Toss and stir again for 1 to 2 minutes.
Transfer on to a plate and serve with steamed white rice.
