Cambodian Claypot Caramelized Pork Ribs

INGREDIENTS
.5 lb pork ribs, cut into bite-sized chucks
1 tbsp cooking oil
3 cloves garlic, chopped
2 tbsp palm sugar
2 to 3-star anise
3 slices fresh ginger
2 tbsp soy sauce
2 tbsp dark soy sauce
1 tsp ground black peppercorn
2 boiled eggs
1 cup water
Thai birdβs eye chili peppers
Fresh cilantro
For Serving
Steamed jasmine rice
INSTRUCTIONS
Heat the clay pot in medium heat. Add palm sugar and let the sugar dissolve.
Then add the pork ribs and cook for about 4 to 5 minutes.
Add 1 tbsp cooking oil, chopped garlic, sliced ginger, and star anise. Stir and cook for 30 seconds.
Next, add soy sauce, dark soy sauce, ground black peppercorn, and boiled eggs. Stir and mix with the pork ribs.
Pour 1 cup of water, stir, and close the clay pot lid. Bring to a boil, then turn to a lower heat. Let it simmer for 1 hour.
Finally, serve with steamed jasmine rice.
