Crispy Fried Tofu Spring Rolls

INGREDIENTS
10 to 12 oz extra firm tofu or firm tofu, cut into rectangular shapes
2 green onions, cut into 1 inch
6 to 8 dried rice paper wrappers
Cooking oil for deep frying
For Dipping Sauce
2 tbsp soy sauce
2 tbsp vinegar
1 tsp sesame oil
1/2 tsp sesame seeds
1 tbsp sugar
1 tsp chopped green onions
INSTRUCTIONS
For the dipping sauce, add all the ingredients together in a small bowl and mix well. Set it aside until ready to serve.
Dip a rice paper in a bowl of water until completely covered for 10 seconds, then place on a cutting board. Quickly, add tofu and green onion over the rice paper and fold. Make sure to squeeze and fold tightly to expel any air in the spring rolls. Fold in the sides and then roll up into a rectangular shape. Repeat the process.
In a wok, add a generous amount of cooking oil for frying. Wait until the oil is hot, then add the tofu spring rolls. Make sure they are not sticking together. Cook each side of the spring rolls until golden color. Then take them out onto the paper towel to drain the excess oil.
Serve with the dipping sauce and garnish with fresh cilantro leaves.
